This was a throw together recipe that ended up being something I will make all the time now! I never had tofu before and I was shocked at how good it was! I did a lot of measuring with the heart on this one, because I didnt expect to even make this a post so its a bit wonky I apologize!
Low Calorie Tofu Veggie Stir Fry
this meal is vegan, low calorie, filling, and so delicious! I am so happy I randomly decided to throw these ingredients together!
Servings 4
Ingredients
- 1 box Trader Joes Thai Wheat Noodles I love the trader joes brand if im being honest i dont even know of any other brand of these noodles, but i cooked all 3 pouches inside
- ½ c stir fry sauce i use the kikkoman brand
- 1 packet of stir fry veggies (asian medley) were going easy here, i like to buy the frozen ones from trader joes, but if you want to use fresh veggies thats great also!
- 1 block organic extra firm tofu
- onion powder
- garlic powder
- paprika
- corn strach
- olive oil
- 2 tablespoon minced garlic
Instructions
- start by draining and patting dry your tofu and cutting it into cubes, then season generously with garlic powder, onion powder, paprika, and sprinkle the corn starch on top for crispiness when cooking
- add a large drizzle of olive oil to a pan with your minced garlic and let it get hot
- add tofu and cook until it is mostly golden brown stirring occassionally
- remove tofu from pan
- add your thai wheat noodles with another heavy drizzle of olive oil to the pan, breaking up a bit and stirring until they are seperated.
- add ½ cup of stir fry sauce and your veggies, cover and let cook stirring frequently to be careful your noodles dont burn
- once veggies are cooked through add your tofu back to the pan and serve! garnish with sesame seeds if you desire! enjoy!
