Ingredients
- package of chicken sausage links trader joes has reallllly yummy chicken sausage!!
- 1 large bell pepper
- 1 small onion optional
- 2 garlic cloves
- 1 c brown rice (or any rice of choice) i loveeee to use the 90 second microwave rice so simple and easy
- 1 tablespoon olive oil
Sauce
- 1 cup low fat plain yogurt or you can use mayo
- 2 teaspoon Worcestershire sauce
- 1 teaspoon onion salt
- 1 teaspoon garlic powder
- salt & pepper to taste
Instructions
- in a large pan over medium high heat, add 1 tablespoon olive oil, chicken sausage links, sliced peppers & onions and cook until sausage is browned and cooked through and peppers and onions are soft.
- remove chicken sausage from the pan and slice into bite size pieces, add back to pan.
- add bag of rice (if using pre cooked rice- if not, cook rice seperately and then add rice once cooked) and about ¾ cup of water and let simmer while mixing together.
- in a small bowl combine yogurt, Worcestershire sauce , onion salt, garlic powder, salt & pepper. once well mixed add to skillet.
- let simmer for about 2 more minutes, then serve. enjoy!!!!
