Cheesy Enchilada Bean Dip

Ingredients:

  • 1 onion, chopped
  • 1 jalapeno chopped
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 packet chili seasoning
  • 2 cups shredded cheddar cheese (or shredded queso, optional)
  • 4 oz cream cheese, softened
  • ½ cup sour cream
  • 3 cloves garlic, minced
  • ¼ cup green onions, finely chopped (plus extra for garnish)
  • 3 tablespoon enchilada sauce

Instructions:

  1. Prepare the Beans:
  • Rinse and drain both the black beans and pinto beans.
  1. Sauté Onions, Garlic, Green Onions:
  • In a medium-sized skillet, sauté the chopped onion, minced garlic, and green onions over medium heat until the onions are translucent and slightly caramelized.
  1. Combine Beans, Onions & Jalapenos:
  • Add the drained black beans, pinto beans, and sautéed onion, garlic, and green onion mixture to a large mixing bowl, also add your chopped jalapenos.
  1. Add Chili Seasoning and Enchilada Sauce:
  • Sprinkle the entire packet of chili seasoning over the beans and onions. Add 3 tablespoons of enchilada sauce. Mix well to ensure even distribution of the seasoning and sauce.
  1. Prepare Cheese Mixture:
  • In a separate bowl, combine the softened cream cheese and sour cream. Mix until smooth.
  1. Combine Cheese Mixture with Beans:
  • Add the cream cheese and sour cream mixture to the bowl of seasoned beans. Stir until all ingredients are well combined.
  1. Add Shredded Cheese:
  • Fold in the shredded cheddar cheese (or shredded queso) into the bean mixture. Reserve some for topping if desired.
  1. Heat the Dip:
  • Transfer the bean and cheese mixture to an oven-safe dish. Preheat your oven to 350°F (175°C) and bake the dip for about 20-25 minutes or until it is heated through and the cheese is melted and bubbly.
  1. Optional Broil:
  • If you like a golden brown top, you can broil the dip for an additional 2-3 minutes, but be sure to keep a close eye to prevent burning.
  1. Serve and Enjoy:
    • Once the dip is hot and bubbly, remove it from the oven. Garnish with additional chopped green onions. Serve the bean dip with tortilla chips or your favorite dipping items.
