Equipment

Ingredients

  • 1 large spaghetti squash
  • Extra Virgin Olive oil
  • Salt and pepper to taste
  • 1 container of crumbled feta cheese or a block of feta
  • Grape tomatoes
  • Additional olive oil for drizzling

Instructions

  • Preheat the oven to 375°F (190°C).
  • Cut the spaghetti squash in half horizontally. Drizzle each half with olive oil and generously season with salt and pepper.
  • Place the spaghetti squash halves, cut side down, on a baking pan. Roast in the preheated oven for 45 minutes to an hour, or until the squash is soft and can be easily scooped out with a fork.
  • While the spaghetti squash is roasting, prepare the feta and tomato mixture. In a separate baking dish, combine the crumbled feta cheese or block of feta with grape tomatoes. Drizzle with olive oil and sprinkle with salt. Roast in the oven for 30-40 minutes, or until the tomatoes are soft.
  • Once cooked, remove the feta and tomato mixture from the oven. Use a fork to smash the tomatoes directly in the dish. Alternatively, if you prefer a smoother sauce, transfer the mixture to a blender or food processor and blend until smooth.
  • When the spaghetti squash is finished roasting, carefully scoop out the strands into a large mixing bowl.
  • Mix the roasted feta and tomato sauce with the spaghetti squash strands until well combined. Top with grated Parmesan cheese if you'd like!
  • Serve and enjoy this delicious Spaghetti Squash with Feta and Tomato Sauce as a wholesome and flavorful alternative to traditional pasta.
